Research news 27-02-2024 Scientists use blue-green algae as a surrogate mother for "meat-like" proteins Professor Poul Erik Jensen and colleagues have not only succeeded in using blue-green algae as a surrogate mother for a new protein – they have even coaxed the microalgae to produce "meat fiber-like" protein strands. Read more here. 11-03-2024 Exploring the health-promoting properties of legumes A new research project led by Associate Professor Iben Lykke Pertersen Department of Food Science at University of Copenhagen aims to investigate the immune-regulating potential of legumes, especially in regard to their potential to prevent intestinal diseases. Read more here. 12-03-2024 How the composition of the gut microbiome and antibiotic resistance change throughout life Professor Morten Arendt Rasmussen is one of the authors of a major study that shows how antibiotics affect the gut microbiome of children and adults differently. The study made it into the 2023 top 25 health sciences articles in Nature Communications.
