Scientists use blue-green algae as a surrogate mother for "meat-like" proteins
Professor Poul Erik Jensen and colleagues have not only succeeded in using blue-green algae as a surrogate mother for a new protein – they have even coaxed the microalgae to produce "meat fiber-like" protein strands.

Exploring the health-promoting properties of legumes
A new research project led by Associate Professor Iben Lykke Pertersen Department of Food Science at University of Copenhagen aims to investigate the immune-regulating potential of legumes, especially in regard to their potential to prevent intestinal diseases.

How the composition of the gut microbiome and antibiotic resistance change throughout life
Professor Morten Arendt Rasmussen is one of the authors of a major study that shows how antibiotics affect the gut microbiome of children and adults differently.
The study made it into the 2023 top 25 health sciences articles in Nature Communications.
