These are younger lambs, typically born in spring. Once they have finished with their mothers’ milk at 3-4 weeks, they are ready to get out into the pastures and eat the new spring grass. This combination diet of fresh, nutrient-filled grass and milk gives the lamb its delicate taste and texture.
