EASIEST WEEK EVER

We Need an Easy Week

Pasta salad with grilled eggplant, tomatoes, mozzarella, and zucchini.

While I sit to write this, I’m really not sure what next week will look like. (Will schools be open? Will folks be in the office? Will we be at the peak of the Delta wave in the U.S.?) What I do know is that many of us will be tired—of worrying, of the grinding uncertainty of everything, and of still needing to get dinner on the table every single night.

This is why it’s time for the Easiest Week Ever. Because just deciding what’s for dinner can be exhausting. Because planning in the midst of chaos is exhausting. Because everyone—not just my tyrannical six-year-old—gets hangry when dinner takes too long.

This week’s super-simple meal plan kicks off on Labor Day with some grilling, but we’re sharing it today so you can do whatever grocery shopping you need in advance. Come Monday, we’ll be cooking together through a week of quick, easy, and flexible meals. Tag us @epicurious so we can cheer you on!
