This week's recipe is for taco salad. It was submitted by Linda Dean, from New River, Ariz. She has been in an RV off and on since 1982, living in a 32-foot Traveleze trailer for 9 years. After breaking down and buying a house, she still owned a truck camper. Now she's back in the groove with a 31-foot Alpenlite that has been gently used.

There is something about navigating an 11-ton vehicle towing a two-ton car at 65 miles per hour as trucks wiz by inches away and cars pass with drivers and passengers intentionally giving me the one-finger salute that makes me just a tad bit nervous.

This Wisconsin girl is lucky to be hanging out in Organ, N.M., for the winter. I would have hated to miss this up close and personal experience with a true to size Mainly Marathons caboose.

Desert Shadows RV Park is conveniently located near the intersection of Interstate 17 and Hwy. 101 in north Phoenix, which provides easy access to everything in Phoenix and is only a two-hour journey to Sedona and Flagstaff. It's a pretty park with plenty of desert landscaping and many fruit trees scattered throughout. Quiet and peaceful, it's a good stop for a day or two, or the winter season.

(March 7, 2016) - If you've never heard of The Villages, then you haven't spent much time in Northern Florida. It is a planned community for seniors. With a current population of roughly 140,000, it is the world's largest retirement community. There are approximately 90 miles of golf cart trails. Some residents have even opted to not own a car since they can get to everywhere in their golf cart!

(March 7, 2016) - After being stationary for so long, it felt good to be on the road again! We only traveled about 80 miles to a free camping area a few miles south of Lake Havasu City. We had chosen this spot for two reason; 1) it was free! 2) it was close to the Bill Williams National Wildlife Refuge.

(March 9, 2016) - Our coach has an Independent Front Suspension manufactured by ZF Friedrichshafen AG. Christian, a representative from ZF was at Tiffin to inspect 20 coaches with the ZF suspension. The king pins are in place with caps at the top and at the bottom. Grease and air are in these cylinders. Christian was looking at the bottom caps to determine if they have scratches from a king pin that might have shifted.

(March 8, 2016) - The biggest change is that we remodeled! We took advantage of some time we had in Orlando, Fla., and ripped out the front section of our trailer and rebuilt the kitchen, added storage and removed the "bathroom."
