Silken tofu is a genius item to keep in the pantry, especially in the warmer months, when you can put the tofu on a plate, top it with soy sauce, sesame oil, and scallions, and boom—your refreshing, simple, no-cook dinner is served. Recently, we discovered another great thing to do with silken tofu: using it as the base of a creamy salad dressing or sauce. It’s a great technique to know if you’re cutting back on dairy—or if you simply don’t have any in the fridge.
