Broiled Cod with Fennel and Orange

 
 

One of my favorite tricks for cooking fish—which, bonus, is just as easy on a weeknight as it is foolproof for weekend guests—is to coat the tops of the fillets with a flavored mayo and then sprinkle something crispy and crunchy over the top before roasting.

For this one, I flavor the mayonnaise with orange zest, garlic, and chile flakes, then top it off with sliced almonds. Add white beans, broccolini, fennel, and orange slices and you’ve got a sheet-pan dinner that cooks under the broiler in just 6 minutes.
