I can’t wait for y’all to try this week’s Goodtaste original recipe! Who doesn’t love a crispy, fried chile relleno, but sometimes the breading is too heavy on a hot summer day. With that in mind, our test kitchen created a “naked,” summer-ready version studded with fresh corn and topped with a vibrant cherry tomato-avocado salsa. We’re also sharing some of my favorite margaritas in Texas for National Tequila Day (July 24th!), colorful summer salads and more. Find it all below!

Make This Now: “Naked” Chile Rellenos
We dubbed these “naked” chile rellenos because there’s no breading and no frying! Instead, the poblano peppers are stuffed and baked in a smoky tomato sauce, creating a lightened-up spin on a Mexican favorite. The cheesy chorizo filling is studded with fresh summer corn and a chunky cherry tomato-avocado salsa is piled on top, showing off some of the season’s best ingredients.
