The Last Bite Is the Brightest

The emotional quality of most Thanksgiving foods can be summed up with one word: comfort. Mashed potatoes, sweet potatoes, stuffing, gravy—these are the weighted blankets of the food world.

Pie is usually in that category, too—surely you’ve met a pumpkin pie that you’ve wanted to curl up and take a nap in. But this year we’re unveiling a different kind of Thanksgiving dessert. Sarah Jampel’s Cranberry Chess Pie is as sunny and sweet-tart as a lemon bar, with bites of bursted cranberries that’ll stave off any food coma. It’s an uplifting way to end the holiday meal—and, if I can get a little poetic here, a moment of brightness in an otherwise heavy year.
