A fully grown broad breasted bronze turkey.My dear friends, Michael and Lori, decided to raise a turkey for Thanksgiving this year. They have raised chickens for the last few years and have a large backyard. Although I'm sure they will never raise a turkey again, the last 8 months have been quite an adventure.

I have an 18 quart roaster which I use because I don't have a functioning oven. I generally use a 9x13 Pyrex dish when making lasagna and other casseroles and cakes but it's almost impossible to get out without tilting it or burning my hands.

Creamy Garlic Mashed Potatoes

I make a ton of garlic mashed potatoes every year for Thanksgiving. Every year, I have more and more health conscious guests. I make a version that is lower in fat and calories and higher in fiber. The secret to this mash is using the potatoes' own starchy water for depth in place of sticks of butter and whole milk. At the end, you add a bit of butter for that flavour. For guests who do want the full on fatty version, simply add a pat of butter to theirs and mix!
