Sweet Potato Bowls With Spiced Lamb and Mushrooms

 
 

This recipe serves two, but I like to make it just for myself, and save half the components for lunch or dinner the following day. (It also doubles easily if you’re cooking for more people.)

There’s not a lot of lamb in here—just enough to give the mushrooms extra flavor and add a bit of protein. While I sauté, I steam halved sweet potatoes and quick-pickle fennel and onions so that everything is ready at the same time.
