BY ADAM DAIGLE | Acadiana Business Editor There's a scene near the end of the film Oh Brother, Where Art Thou? where George Clooney's character starts to sing into a microphone when he is immediately struck at how the crowd is going berserk over his little song. That's kind of how I felt when I first wrote about Southern Classic Chicken's plans to open in Lafayette. Much like Everett McGill, I was surprised by the reaction.
