My journey has been a roller coaster ride since 2014. Gaining and losing weight has been a constant in my life since I have six kids. I went vegan and initially lost a lot of weight. I went from 185 in 2014 down to 142. I stayed vegan for years. Well as life would have it, I went back to my old ways a few times. Yet I always ended up coming back to vegan because I just felt better and ethically knew better. I have Hashimoto's disease, so weight loss is not an easy thing for me. Most top thyroid doctors recommend meat, specifically organ meats, to help heal thyroid issues. So, I would feel like I was harming myself and go back to eating meat again. Fast forward to 2021, I went to my doctor and my cholesterol was 225. He wanted to put me on a statin. I told him there was no way that was happening, I knew what to do (I was already vegetarian at the time). So I cleaned up my act yet again...I went back to plant-based and found âThe Starch Solutionâ book that I already owned, dusted it off, and got serious about it this time. |
