Mostly, these are frosted sandwich cookies. But there are two ways to make them.
Some of them are refrigerator cookies, chilled and cut into slices. After baking, they stuffed with frosting or jam. The sandwiches are then dipped in frosting.
But the others, they're sugar cookies rolled and cut into shapes with cookie cutters. Again, they're made into sandwich cookies and dipped in frosting.
