The intention of this recipe was to stretch one box mix of pumpkin pie bars that served 10 people, into pumpkin pecan cheesecake bites that served 20. It was a total success, especially for those relying on portion control. I found the pumpkin pie bar box mix for $1.49 at the market, and had everything else on hand. These came out SO yummy and there was very little work involved.

I like chunks of veggies in my soup. I whirl them in the blender or use an immersion blender until the veggies are chopped well, but not puréed. I use enough veggies to make probably 2 cups or so. I use onions, mushrooms, zucchini, yellow squash or even frozen stir-fry veggies.

In Europe Christmas means citrus, the green grocers shelves are filled with citrus of every size and shape. The smell of the peel brings back happy memories of Christmas past. For me this is also the signal to do what I love the most; making something out of nothing and making a delicious festive treat to help my friends and family celebrate Christmas. Don't be daunted by all the steps, the ingredients are few and the delicious results and compliments make it well worth spending your time!
