Pineapple Upside Down Pancakes

This is a fun twist on pancakes. They are so decadent, they can be served for dessert. Caramelizing the pineapples not only gives them a nice rich flavour, but also creates a sticky toffee in the pan that you can use as a drizzle in place of syrup. When you cut into a stack of these, the little Maraschino cherries pop out onto the plate. What a lovely surprise!

Vidalia onions are so named because they were originally grown in Vidalia, Georgia in the 1930s. Several varieties comprise the Vidalia group, including the hybrid Yellow Granex. The Vidalia onion was declared Georgia's state vegetable in 1990.

I always reuse the paper that my butter or margarine is wrapped in to butter any pans I will use in my baking recipes. You can even fold them in half and leave them in the refridge after you take the margarine out and if you don't need them for that recipe.
