Pineapple Upside Down Pancakes

By attosa

stack of pineapple upside down pancakesThis is a fun twist on pancakes. They are so decadent, they can be served for dessert. Caramelizing the pineapples not only gives them a nice rich flavour, but also creates a sticky toffee in the pan that you can use as a drizzle in place of syrup. When you cut into a stack of these, the little Maraschino cherries pop out onto the plate. What a lovely surprise!

Hummus-Crusted Chickenon dinner plate with broccoli and potatoes I used bone-in thighs and cooked about 40 minutes in the toaster oven. I only used onions, since I didn't have the squash. It was delicious.

I was running low on frosting and decided that instead of making more to add a thicker coating to cover all of the crumbs, I would embrace my mess!
