Dear Creative Cook, Every November, our taste buds anticipate the food we get to enjoy with our friends and family on Thanksgiving. The table is full, pies are plentiful, and there’s always something for everyone. We bask in the warmth of our families and our kitchens, and settle in for a meal that reflects our shared story - specifically our shared recipes. After all, who wouldn’t want the recipe for your aunt’s Pecan-Crusted Sweet Potato Casserole? (Good news! We have it, and we’re sharing it with you!) We actually have three recipes to share with you. They’re ideal for Thanksgiving, but you can cook these anytime you want to put something tasty on your table. This first recipe, from Kristen Heigl, won our 2018 recipe contest, and it’s not only delicious, it’s also a gorgeous dish. The red cranberries, chopped oranges, white goat cheese, and green basil bring a burst of color to this Cran-Orange Couscous Salad that will set your table aglow. Start with 3 cups of pearl couscous, and cook according to the package directions. Place the cooked couscous in a bowl and add 1 cup of goat cheese, ¾ cup of dried cranberries, ½ cup of chopped pecans, 2 cans of chickpeas (drained and rinsed), 5 chopped basil leaves, 2 large oranges (peeled and chopped), and 1 chopped red onion. Mix these together, then make a vinaigrette. Whisk together ½ cup of olive oil, ¼ cup of balsamic vinegar, 4 tablespoons of orange juice, 1 tablespoon of orange zest, 2 teaspoons of honey, and salt and pepper. Pour the vinaigrette over the salad and stir to coat. Fall Harvest Squash Rolls | Of course, no Thanksgiving meal would be complete without squash or rolls. This recipe uses both to make rolls that are always a hit! People are surprised to learn they’re made from squash, but these rolls come out of the oven golden and soft. Start by dissolving 2 tablespoons of active dry yeast in ½ cup of warm water, and setting it aside until foamy. While the yeast is working, cream ¾ cup vegetable shortening and ½ cup of sugar in a bowl, then beat in 2 eggs. Add 1 cup of cooked and mashed winter squash and mix until blended. Add 1 cup of warm milk and the yeast mixture, and continue mixing while slowly adding 1 teaspoon of salt and 8 cups of all-purpose flour (plus more as needed). Mix until the dough is soft and pulls away from the side of the bowl, being careful not to add too much flour. Cover and let the dough rise until it doubles in size. Punch it down, cover, then it let rise until it doubles again. Divide the dough into four equal pieces, then divide each quarter into 12 pieces. Shape each piece into a ball, and place them single layer into four greased 9-inch cake pans. Cover and let them rise until they are doubled, then bake for about 20 minutes in a preheated 375° oven. | | Pecan-Crusted Sweet Potato Casserole | Desert is another favorite at the Thanksgiving table - especially when you don’t have to wait until after the main meal for it! This casserole could be a desert, but we prefer it as a side. Start by baking 4 large sweet potatoes. Pierce each sweet potato several times with a fork or paring knife and place on a baking sheet. Bake them for 60 to 70 minutes (or until soft) in a 350° oven. Place the baking sheet on a cooling rack, cut lengthwise slits in the sweet potatoes and let them cool for 15 or 20 minutes. Once they’re cool, scoop the sweet potato flesh into a large bowl and mash it with a potato masher or fork. Using an electric mixer, beat in 4 tablespoons of softened butter, ½ cup of sugar, and ⅓ cup of light cream or milk. Once that is blended, add in two room temperature eggs, one at a time. Beat to combine, then add 1 teaspoon of vanilla extract, 12/ teaspoon of salt, and ¼ teaspoon of allspice, beating until evenly mixed. Spread the mixture into a buttered 2-quart casserole. For the topping, combine ⅔ cup of packed light brown sugar, ¼ cup of all-purpose flour, ¼ teaspoon of cinnamon, ¼ teaspoon of salt, and 4 tablespoons of melted butter in a food processor and pulse briefly. Add ⅔ cup of pecan halves, spread evenly over the sweet potato mixture, and bake at 350° for 45 minutes. Let cool for 15 or 20 minutes before serving. Oh, and make sure you get a serving before putting it on the table or you might miss out!
