The Raclette cheese sits on shelves inside the cave, every other day workers flip the cheese and wash it with a brine solution, ensuring the right types of microbes are growing on the surface. The cheese is aged for three to five months inside the cave at around 55 degrees fahrenheit. (Joel Bissell | MLive.com) |
