Lemon Chicken Soup

Lemon Chicken Soup in bowlI came up with this recipe when I had next to nothing in the house to cook with. I had a roasted chicken that was torn to bits, lemons from my garden, carrots and onions that I'd dried over the summer, and some quick oats. For being so bare-bones, it was absolutely delicious, and was even better the next day. So comforting!

Steamed Artichokes

removing Steamed Artichoke leavesI have enjoyed artichokes only a few times. Now that I know how to make them, I'll be doing it more often. I used my pressure cooker, but you can steam them 25-45 minutes, depending on the size. A pressure cooker takes 15-20 minutes, with a 10 minute natural release.
