Hi Achternaam, See the picture below? This is what you get when you don’t take the time to thin the carrots. Lots of super thin carrots. Still taste good but kind of a pain to peel for canning. Oh, yes, we eat them with the peels. Just canning projects need to be peeled. I picked out the largest to peel and can, and the rest will be snacked on, frozen, or cooked for supper.
Okay, enough about carrots. Let's talk about canning! :)
