| ROE DEER RECIPE | Springtime on the plate | | Roe deer filet with asparagus-rhubarb mix (Serves 4) Ingredients for sauce and meat: 500g roe deer bones 120g onions 80g carrots 120g celery 4 tbsp vegetable oil 1 tbsp tomato paste 300ml red wine 400ml game stock 0.5 tbsp crushed juniper berries 0.5 tbsp crushed allspice berries 0.5 tbsp crushed black pepper corns 2 bay leaves 4 thyme branches 400g roe deer filet Salt, pepper 1 tbsp apple syrup 1 tbsp cooking starch 4g dark chocolate Ingredients for vegetables: 400g rhubarb 1 kg white asparagus 2 cloves of garlic 1 onion 60 roughly chopped cashew kernels 50g butter 1 tbsp mustard Fresh nutmeg Sugar Salt, pepper For the sauce chop the bones into small pieces the size of walnuts. Cut onions into fine pieces. Wash, peel and dice carrots. Clean, wash dice celery. Heat up 3 tbsp of vegetable oil in a large flat pan, add bones and roast at high heat for 10 minutes. Add onions, carrots and celery and roast for another 6-8 minutes. Stir in tomato paste and roast for 30 seconds. Deglaze with 150ml wine and reduce at high heat. Fill up with stock and 400ml water and boil without a lid on low heat for 1 hour. Remove foaming at the surface with a skimmer. After half the cooking time add juniper berries, allspice, pepper, bay leaves and thyme. After one hour pour the stock through a fine sieve and reduce to 250ml. For the sauce stir in apple syrup, cooking starch and melt chocolate. Heat up the remaining vegetable oil in a coated pan and roast the meat on all sides at medium heat for 2 minutes. Season with salt and pepper. Put meat on a baking tray. Then put in a preheated oven on the second shelf from the bottom and cook for 12-14 minutes at 150 degrees (gas level 1, fan oven 12 minutes). Take out meat and wrap in silver foil. In the meantime peal rhubarb, cut into pieces of about 10 cm and halve lengthwise. Boil in salted water for 1 minute, then rinse off with cold water. Peel asparagus, trim the ends and boil in salted water for 8 minutes, drain and keep hot. Peel and dice finely onion and garlic cloves. Sauté in butter together with the chopped cashews and add asparagus and rhubarb. Season with sugar, salt, pepper, mustard and nutmeg. Then cook for another 3 minutes. When the vegetables are done, unwrap the meat and cut diagonally into slices. Arrange asparagus-rhubarb mix and filet slices on heated plate, sprinkle with sauce and serve with potaotes tossed in butter. |
