Leftover Mashed Potato Waffles

These are my favourite things to make after Thanksgiving, Christmas, or any time I have an abundance of leftover mashed potatoes. These waffles are creamy in the middle and crispy on the outside; perfect for breakfast with some eggs or just on their own. Definitely a fun twist on a leftover item.

Here's another way of cooking onion rings. Instead of bread crumbs which I find to be annoying as it gets easily burned, I tried using crushed cheese corn chips. I made an easy batter and then dipped them into the crushed corn chips.

Let the cookies cool for a bit if you can stand waiting. Go on, try, I dare you! When hot, they are moist and very fudgy inside, with a touch of crispiness on the outside. When fully cooled, they settle into a rich chewy cookie center.
