A couple weeks ago, we made these cute double layer cakes and frosted them with really good whipped cream frosting. It really created a buzz storm in the store. So we're doing it again--but in cupcakes.
Whipped cream frosting is simple to make--whipped cream, flavors and a stabilizer. We added inclusions like chopped nuts and fruit filling. People called it the best frosting they had ever tasted. (And the cakes are good too.)
We used meringue powder as a stabilizer. It's easy, simple, and you can use as much as you want. Today and Saturday, we'll make some with unflavored gelatin as a stabilizer and compare those to frostings with meringue powder. (We'll report back and send you the recipes.)
