| | It’s Cinco de Mayo time, friends! For me, this means time with family, enjoying the gorgeous Spring weather (I've already hit the pool, what?), and, most importantly, eating DELICIOUS food! Deciding what to eat is challenging, though. Will it be Carne Asada Tacos? Mexican Street Corn? Bean and Avocado Salsa? Oh, and then there are the sweet options, like Cream Cheese Flan, Fried Ice Cream, Tiffany Punch, and MARGARITAS.
Hard to decide, right? One recipe that I know I'll be making is my Layered Mini Taco Bake Casserole. It's tiny tacos stacked on top of rice, refried beans, and salsa con queso, then topped with salsa con queso. Baked in a casserole dish until cheese is bubbling hot. Mmmmmm...
