Regional food recovery effort fills gaps in food insecurity

Attorney General Keith Ellison said Thursday that he won’t appeal a Ramsey County judge’s ruling that tossed out several restrictions on abortion.

Those laws deal with timing, notification rules and where abortions can be done.

That’s already drawn rebukes from Republicans challenging Ellison in this year’s campaign, who say he didn’t push back hard enough against the lawsuit from abortion rights groups. Ellison says his office put long hours and big expense into the case, and he doesn't think an appeal would yield a different outcome.

Even after food stores pass excess fresh food they cannot sell to food shelves, some of that produce may still go to waste. If food shelf clients don’t pick it up, it might go to the landfill. In Mankato, the South Central Minnesota Food Recovery Project has come up with another way to use that food, while also helping the planet.
