This a wonderful whole grain bread! It's not your ordinary whole wheat bread, it's made with potato flour and lots of sweet milk. The potato flour gives it just a hint of rustic flavor, almost sourdough. But the milk is a sweetener--lactose--and the combination is delightful. Potato flour is hygroscopic, that is, it retains moisture from the air instead of drying out as wheat flour does. It stays fresher, longer. The result is a tempting loaf that is tender and moist with the nutty taste of fresh ground wheat. It's better tasting than most whole wheat breads. Your family will love this bread.
| Bread salads have three components: Greens, meats or cheese for protein, and bread chunks. Add whatever dressing that you like. The bread chunks play the role of croutons only there are more of them, larger, and not as crunchy. | |
In our test kitchen, we've made thousands of bread loaves, most of them in a bread machine. Consistently, a good dough conditioner makes the bread an inch taller. So we add it to all our bread mixes.
