Beyond the event, you can also discover the nuance of Colorado’s delectable culinary scene. Unlike states with iconic dishes like New England's clam chowder, Colorado's food world is a tapestry woven from fresh produce, a booming craft beer industry, and a commitment to sustainable agriculture.
While you might not find a single dish that screams "Colorado," venture beyond the Rocky Mountain oysters (a novelty for tourists, not a local favorite) and you'll discover a treasure trove of flavors. The state's high elevation and unique climate in the Western Slope region create ideal conditions for growing impossibly sweet and crisp peaches, apples, pears, plums and cherries. These find their way onto menus and into markets, adding a burst of local freshness to every bite. Another hidden gem is the Pueblo chile, a fiery and flavorful pepper grown near Pueblo in southern Colorado. Unlike the green chile sauce of neighboring New Mexico, Colorado's rendition is more of a hearty stew, featuring the Pueblo chiles alongside pork, tomatoes, and sometimes even beans. It's a dish worth seeking out, especially during a Denver visit.
Colorado's strength lies in its commitment to quality ingredients. Farmers across the state are embracing sustainable and organic practices, and the bounty of their harvest–think potatoes, beans and wheat–is finding its way onto plates and into glasses. Local grains are a key ingredient in the state's award-winning craft beers, while distilleries are also turning to these high-quality crops to create unique spirits. This focus on local ingredients extends beyond restaurants and breweries. The Colorado Grain Chain, a collaborative effort launched in 2019, connects grain growers with restaurants, food artisans, and consumer packaged goods (CPG) brands. This initiative fosters a strong supply chain that benefits everyone, from farmers to the companies crafting delicious food products for all to enjoy.
