COOK THIS NOW Before we all started sticking closer to home than ever before, I had the great opportunity to visit a Persian-American home cook, and to learn about this easy dish of stewed greens with lime juice and eggs. We used a combination of fresh spinach and a mix of dill, cilantro, and parsley to make ours, but the method works with any mix of hearty greens (fresh or frozen kale, collards, chard, etc.) and any tender herbs you might have stashed.
