Breakfast Sandwich With Slow-Cooked Onions and Spicy Herb Spread

Taking 25 minutes to slow-roast some onions may sound like the most extra step you’ll ever take for a breakfast sandwich, but hear me out: These onions are tossed with soy sauce and garlic powder before they go into the oven, which amplifies their umami to exceptional levels. Plus, they can be made up to five days ahead—toss a big batch in the oven while you’re eating dinner and they’ll be ready to slip into an English muffin (with scrambled eggs and a vibrant herb sauce) in the morning.
