Here's how to fill cupcakes with with a whipped cream filling. The cupcakes above are made with a cream cake mix. See why it makes better cupcakes than store mixes. Then they're dipped in melted chocolate frosting to create that glazed chocolate topping. The frosting/filling is made with extra heavy whipping cream (we use Darigold 40% from Sam's Club) with meringue powderadded for a stabilizer. Make regular or flavored whipped cream and stabilize it with two to four tablespoons of meringue powder. | |
The filling is inserted with a pastry bag equipped with a star tip. The tip is pressed through the frosting to the center of the cupcake and then the bag is gently squeezed. Simple!
