Those are sunshine sandwiches above. Erin in our store makes these and her kids love them--bacon, tomatoes, and cheese piled on toast and stuck under the broiler for a few minutes.

I like tomatoes so mayo and a couple tomato slices on whole grain toast makes a great quick meal for me.

I have a little granddaughter that loves cinnamon sugar toast.  Sprinkle bread with cinnamon and sugar, place the slices on a baking sheet, and toast the concoction in a hot oven for crusty topped cinnamon toast.
