Moist and hearty, this month’s recipe featuring Glutenfreeda Granola is perfect for surprising a sweetheart at breakfast or for a Valentine’s Brunch! Ingredients: 1 1/2 cups Glutenfreeda Granola, any flavor (we used Cranberry Cashew) 1 1/2 cups all-purpose gluten-free flour 1 Tbsp. baking powder 1/2 tsp. salt 1/2 cup brown sugar, packed 1 1/2 cups of fresh grated carrot 2 eggs 1/2 cup vegetable oil 1 cup buttermilk Directions: Combine gluten-free flour, baking powder and salt in a small bowl and set aside. In a large bowl mix eggs, vegetable oil and buttermilk until combined. Add Glutenfreeda Granola, brown sugar and grated carrot to wet ingredients. Mix well and fold in flour mixture. Fill greased and floured bread pan and bake in 350 degree oven for 55-60 minutes. Cool completely on rack before frosting. |
