Jo’s recipe for Gingerbread Cake is perfect for parties.Another recipe from Jo for your holidays. Just the scent of freshly baked gingerbread cake will get everyone in a festive mood. | | Gingerbread Cake | Yields: 1 loaf Ingredients: ½ cup soy milk ½ tablespoon white vinegar ½ cup molasses ¼ cup maple syrup ¼ cup oil 2 tablespoons puréed soft tofu or 1 tablespoon egg replacer 2 cups mixture of unbleached and whole wheat pastry flour ¾ teaspoon baking soda ½ teaspoon salt 1 tablespoon ground ginger ½ teaspoon ground cinnamon ½ teaspoon ground nutmeg ¼ teaspoon ground cloves pinch cardamom zest of ¼ of an orange ½ cup raisins Directions: Preheat oven to 350°F.Mix the liquid ingredients in a blender with the tofu.In a large bowl, sift together the remaining ingredients except the zest and raisins.Add the wet ingredients to the dry and mix gently.Add the zest and raisins. The batter will be thick.Pour into an oiled loaf pan. Bake 45 to 50 minutes. | |
