So I hear there’s a big football game this weekend, right? I’m just in it for the food. That means posole, a Mexican hominy stew. I make mine with pork ribs and a red chile purée. And guess what: it can be made entirely in advance (in fact, it’s better that way). While the stew warms up, set out a buffet of toppings (avocado, cheddar, queso blanco, shredded cabbage, lime wedges, tortilla chips, pickled jalapeno, sliced radishes) so that each guest can top their own bowl as desired. The more toppings, the more fun! I’ll be rooting for you.
