The best way to tell is to bake your cheesecake in a properly heated oven for the specified time and then jiggle it to tell if it's really done, "the jiggle test" as explained in the article. But to be sure, you can use a good kitchen thermometer. With a little experience and a kitchen thermometer, you'll soon be able to tell with a jiggle.
