You may remember Ruben Chavez, the guy behind the El Paso Mexican Grill locations in Lafayette and others in south Louisiana. He named popped up a few days ago after he was granted a demolition permit inside the former Hooters space at 3221 Ambassador Caffery Parkway. He gave me quick details of what he has planned there.
