Hi Do, November is hunting season in many places across the US. So canning meat questions often pop up in my inbox. I've been asked if you can pull meat from the freezer and can it, and I am happy to report that YES. That is perfectly acceptable. You need to defrost the meat and can it following usual directions. (links just below) My husband had a good hunt this year. But I was so busy I didn't get any of it canned and so just like many of you I put it all in the freezer. However I DID take the time to cube up the meat I plan to can later and my husband stripped the meat he will be making into jerky. Now it is all ready to thaw out and can at a later date. So if you can do this now it is a time saver later. Raw pack method is my prefered for canning venison but you can also can it precooked. I've got links to both directions from this page.
