In this riff on the classic Monte Cristo, green apple and canned green chiles cook into a sweet and spicy compote that you’ll slather on white bread. The assembled sandwiches—loaded with ham and cheese—get dredged in egg (French toast–style) before they hit the pan.

INGREDIENTS

Jam
• 1 green apple
• 1 jalapeño
• 1 4-oz. can diced Hatch green chiles or other mild green chiles
• 3 Tbsp. granulated sugar
• 3 Tbsp. apple cider vinegar
• ¼ tsp. kosher salt

Sandwiches
• 3 large eggs
• 2 Tbsp. milk
• Pinch kosher salt
• 4 slices sturdy white bread
• 4 ounces white cheddar or Swiss cheese
• 4 slices ham
• 2 Tbsp. unsalted butter
• 1 Tbsp. olive oil
