Tonnato Eggs

Perhaps you’ve heard of Vitello Tonnato? It’s a classic Italian dish with a creamy, punchy sauce of tuna puréed with anchovies, capers, and lemon. I knew I wanted to play with those flavors when I was developing a holiday cocktail party menu inspired by the Feast of the Seven Fishes.

For my tonnato-inspired hors d’oeuvre, I skipped the traditional veal and turned instead to deviled eggs, adding those sauce ingredients to the creamy yolk filling. To garnish, I crisp up a few extra capers in a frying pan—and if I’m feeling extra festive (’tis the season!) dollop some salmon roe on top, too.
