These Rellenos are out of this world! A friend of my mom, who had a restaurant for over 60 years, taught my mom years ago how to make these, then my mom taught me too. I just made them again a few nights ago. My husband loves them, and that makes making these such an enjoyabe thing for me too.

This recipe can be adapted to what you have on hand. I will write the recipe as I made it. It can be doubled or even tripled. A great way to use the zucchini that is plentiful and inexpensive this time of year.

Crispy Parmesan Chicken Breasts

These chicken breasts are so juicy, and bursting with flavour. The exterior gets a delicious crunch without the use any kind of breading or flour. The trick is in stuffing Parmesan cheese right under the skin and finishing them in high heat. I am in love with this dish!
