Did you miss breakfast today? No worries. Below is Chef Jo’s Nut Milk French Toast which is very easy to whip up last minute. This is a different recipe than the one in the current cookbook. Remember, Jo has two cookbooks. This version is from the book that is now out of print. Nut Milk French Toast Experiment with breads—try using cinnamon raisin bread, a nutty bread, or thick-sliced Italian bread. Yield: 2–3 servings Ingredients: ¼ cup raw cashews, sunflower seeds, almonds or walnuts 1⅔ cups hot water 1 teaspoon cinnamon ½ teaspoon nutmeg 1 teaspoon vanilla extract pinch of salt ¼ cup sweetener of your choice 2 tablespoons oil 4 to 6 bread slices Directions: Soak the nuts in enough hot water to cover them for 15 minutes, then drain. Blend the soaked nuts with hot water, cinnamon, nutmeg, vanilla, salt, and sweetener in a blender until smooth. Pour the mixture into a shallow dish. Heat the oil in a large skillet over medium heat. Dip bread slices into the nut mixture and cook on each side until golden brown. Serve hot with maple syrup, applesauce, or your favorite fruit sauce. |
