| COOK THIS NOW  Of the many great reasons to own an Instant Pot, I believe the most convincing is how quickly and beautifully you can cook a batch of dried beans. I’m a white bean lover myself, and the bigger those beans the better. So, while I might consider gigante beans queen, the more easily found lima beans (sometimes sold as “butter beans”) are usually the go-to for me.
