Stir Fry Vegetables with Quinoa

At the end of the week, our family uses any leftover fresh vegetables we may have. This is a perfect option because you can sauté all your vegetables with a dash of soy sauce, and oyster sauce for flavor.
Instead of buying cooking spray all the time, invest in a oil-sprayer. It's basically the same thing as the spray cans, except you can refill it with whatever oil you prefer.
