This recipe was published as part of a holiday story last year, but I think that now is an even better time to make these cookies. Goat butter gives the shortbread a slight tang that isn’t recognizably goat-y, but does lend a certain delicious complexity.

Make a batch and turn them into cookie sandwiches filled with seasonal fruit jam, or spread them with nut butter and top with sliced figs or plums. Or just nibble them plain with an afternoon iced tea or coffee (or vermouth) as you watch the summer sun fade away.
