Topics of discussion will include: canning, dehydrating, fermenting, freezing, ways to use the whole crop, recipes and more! Rob Dumas is the Food Science Innovation Coordinator and Facility Manager for the School of Food and Agriculture based at UMaine’s Orono campus in Hitchner Hall. Rob has a split appointment with the School of Food and Agriculture (SFA) and the Office of Innovation and Economic Development (OIED). Rob is currently certified as an Executive Chef with the American Culinary Federation, where he is serving as the Chapter President for the Downeast region.
