I grew up with muffins. Back in the old days, my mom used the refrigerator bran muffin recipe found on cereal boxes. They were part of the breakfasts that she served her family. And I didn't mind leftover muffins after school, either.
These are as good as mom's muffins. They're quicker; they're from a mix. And leftover muffins--put them in a bag and freeze them. Then. on a busy morning, I nuke one or two to have fresh muffins again.
But what's really fun, is all the variations you can make. Throw a handful of dried cranberries in the batter with the zest from an orange, and you have cranberry orange muffins. Or add a couple of those over-ripe bananas, and you have banana muffins.
Your family will love your muffins.
