Dear reader, This week’s Table Talk is coming to you from both the future and the past. I’m writing it in advance of a trip to St. Martin, but by the time you read this, I will be there, my Dry January streak broken many times over, rum punch flowing through my veins. Given the time of day this newsletter goes out, I’m probably at this moment making my way through a late breakfast of pain au chocolat while simultaneously planning lunch (maybe griot, maybe grilled snapper) and dreaming of how I can make a midlife career change from food editor to floating bar owner. Speaking of croissants and lofty goals, this week’s lead story is about Lili Linda, a pastry chef who recently opened Tatin Bakehouse in Oakville. After years of working at acclaimed bakeries and restaurants in the GTA—Butter Baker, the Tempered Chef, Hexagon—Linda decided to strike out on her own. Now she’s turning out canelés, madeleines and crème brûlée croissants from her sort-of-secret pâtisserie on a stretch of Wyecroft Road populated by auto body shops and used car dealerships.
