These grilled cheese sandwiches are typically truly grilled outdoors over open coals. But in her book, In Bibi’s Kitchen, Epi contributor Hawa Hassan adapted them for a cast-iron skillet, slicking the outside of the bread with mayo for perfect edge-to-edge browning. The most important ingredient: Chakalaka, a savory, spicy vegetable relish that’s laced with tumeric, cumin, and tangy white vinegar or lemon juice.
