Cardamom-Pistachio Bûche de Noël

Admit it: Every year you think about making a bûche de Noël, don’t you? Is that just me? The swirling cake and filling, the whimsical tree-stump design, the cocoa-topped meringue mushrooms—they’re both more enchanting and more delicious than any gingerbread house I ever wasted time on as a child.

And recently—after getting a tutorial from Samantha Seneviratne—I realized, making one is actually pretty easy. Sure, there is some solid time commitment involved, but what else are you doing on your holiday break? A puzzle? Samantha’s version is spiced with cardamom and filled with a mossy green pistachio custard, but what I love most is the flaky chocolate bark that gilds the stump like the peeling trunk of a sycamore tree. It’s whimsical, it’s magical, and it’s edible: exactly what I want for Christmas.
